Well, you definitely cannot visit during exam period when all colleges are closed or during the Easter term when most of them are closed. If you want to know exactly the opening hours of each college, check with TIC. Have some money prepared because some colleges like King's or Trinity have entrance fees of ₤1-4. Also don't be surprised if some colleges won't let you in: they are becoming more and more reticent to tourists.
