The Balmoral hotel, on 1 Princes Street, is the typical Scottish hotel, where I paid 300$ sharp last year. It has no connection with the castle that has the same name, but you're treated like in a castle: kilted guards stay at the entrance, whiskey pours and the furnishings are elegant. A long time ago it was a railway hotel (reservations@thebalmoralhotel.com).
